Key Lime Cake

Sorry this is so late. Blogger was not working for me, some kind of server issue.


Cake Ingredients

1 pk Duncan Hines Moist Deluxe Lemon Supreme Cake Mix
1 pk (4 serving size) lemon instant pudding and pie filling mix
4 eggs
1 c Crisco Vegetable Oil
3/4 c water
1/4 c key lime juice (*see tip at bottom)

Glaze Ingredients

2 c Confectioners Sugar
1/3 c Key Lime Juice
2 tablespoons water
2 tablespoons butter, melted

Additional confectioners suger
Lime Slices for garnish
Fresh strawberry slices for garnish (optional)


1. Preheat oven to 350. Grease and flour 10 inch Bundt or tube pan.

2. For Cake: combine cake mix, pudding mix, eggs, oil, 3/4 cup water and 1/4 cup key lime juice in a large bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed for 2 minutes. Pour into cake pan. Bake at 350 for 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pan 25 minutes. Remove cake from pan onto cooling rack. Place cake onto a large plate that you wish to serve it on. Poke holes in top of warm cake with toothpick or long tined fork.

3. For Glaze: combine 2 cups of confectioners sugar, 1/3 cup Key lime juice. 2 talbespoons water and melted butter in a medium bowl, mix well. Pour slowly over top of warm cake. Cool completely. Dust with additional confectioners sugar. Garnish with lime slices and strawberry slices, if desired.

*tip* fresh or bottled lime juice may be substituted for the Key lime juice.
