Coconut S'mores

Preheat the oven to 350*.

Now you'll want to line a 9 inch square baking dish with foil, leaving about 2 inches or so overhang all around. Press 1 full roll of refrigerated sugar cookie dough into the dish. Bake for around 20-25 minutes or till its lightly brown.

As soon as you remove the dish from the oven top it with 1 cup of semisweet chocolate chips. Cover with foil (to trap the heat and melt the chocolate) for a few minutes. Then spread the chocolate over the cookie so that its even and covers all of the cookie. Then sprinkle with 1 1/4 cups of shredded coconut and 3/4 cup of mini marshmallows. Put back in the over and bake for about 5-10 minutes or until the marshmallows are lightly toasted. Remove from the oven and cool completely. After you allow it to cool you can use the foil to gently lift it from the dish. Now cut into squares and enjoy!

Makes about 16 squares depending on how large/small you cut them.

That sounds really yummy! Our family loves smores but can't always BBQ. This would be perfect!
