Fettuccine Alfredo - Olive Garden Style (RT)

I love going to Olive Garden and getting the Fettuccine Alfredo. Now I can save money by making it at home!

Ingredients for Sauce:

1/2cup butter
8oz pk cream cheese
1 pint heavy cream
1 teaspoon garlic powder
salt to taste
black pepper to taste
2/3 cup grated Parmesan cheese (preferably fresh)


Directions for Sauce:

In a medium saucepan, melt butter.

When butter is melted, add cream cheese.

When the cream cheese is softened, add heavy cream.

Season with garlic powder, salt, and pepper.

Simmer for 15-20 minutes over low heat, stirring constantly.

Remove from heat and stir in Parmesan.

Serve over hot fettuccine noodles

You can also add cooked chicken, broccoli, shrimp, lobster, or anything else that you'd like.

Toasted Coconut Macadamia Pound Cake

Ingredients

For pound cake

  • 2 cups sweetened flaked coconut (about 6 ounces)
  • 1 (7-ounce) jar macadamia nuts (about 1 1/2 cups)
  • 2 sticks (1 cup) unsalted butter, softened
  • 1 1/2 cups firmly packed light brown sugar
  • 8 ounces cream cheese, softened
  • 4 large eggs
  • 1 tablespoon vanilla
  • 2-2/3 cups all-purpose flour
  • 2-1/2 teaspoons baking powder
  • 1 teaspoon salt

For glaze:

  • 1/4 cup of water
  • 3/4 cup sugar
  • 1/4 cup amber or dark rum

Directions:

Make pound cake:Preheat oven to 350 degrees F. and butter and flour a 10-inch (3 quart) bundt pan.

Spread coconut in a shallow baking pan and toast in middle of oven, stirring occasionally and watching carefully to avoid burning, until golden, 10 to 12 minutes. Transfer coconut to a bowl and cool. Spread nuts in pan and toast in middle of oven until pale golden, 8 to 10 minutes. Cool nuts and chop coarse.

In a bowl with an electric mixer beat together butter and brown sugar until light and fluffy and beat in cream cheese. Add eggs, 1 at a time, beating well after each addition, and beat in vanilla. Sift flour, baking powder, and salt into bowl and beat just until combined well. Stir in coconut and chopped nuts.

Spread batter evenly in pan and bake in middle of oven 1 hour to 1 hour and 10 minutes, or until tester comes out clean. Cool cake in pan on a rack 5 minutes and invert onto rack.
Make glaze:In a small heavy saucepan bring water with sugar to a boil, stirring until sugar is dissolved. Stir in rum.

Brush hot glaze evenly over outside of warm cake until absorbed. Cool cake completely.

Sweet n Sour Chicken Stir Fry (RT)

Sorry I haven't posted in a few days. Here is a yummy sweet and sour chicken (my fav) recipe that I hope you'll like.

Ingredients:

1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
1 yellow pepper, cut into strips
1/3 cup Sweet 'N Sour Sauce
1/4 cup Balsamic Vinaigrette Dressing
2 Tbsp. soy sauce
2 cups frozen broccoli florets, thawed
1-1/2 cups instant white rice, cooked

Directions:


Heat oil in large nonstick skillet on medium-high heat. Add chicken and peppers; cook 8 min. or until chicken is cooked through, stirring occasionally.

Add sweet-and-sour sauce, dressing, soy sauce and broccoli; mix well. Cook 2 min. or until heated through, stirring occasionally.

Serve over the hot rice.

*NOTE* This could be made into a vegan dish by omitting the chicken and adding in other veggies like snow peas, carrots, zucchini, squash, etc.

Broccoli Chicken Rice Casserole (Recipe Tuesday)

  • 1/2 c. Cheese Whiz (jar)
  • 1 c. Minute Rice
  • 1/2 stick butter (softened)
  • 10 oz. frozen chopped broccoli
  • 1/2 c. milk
  • Chicken, cooked (the precook cans work great)
  • 1 can cream of mushroom soup
  • 1/4 c chicken broth
  • 1/2 onion, diced small (optional)

Preheat oven to 350 degrees

Combine all ingredients. Place in a greased casserole dish. Bake at 350 degrees for 30 to 40 minutes.

Mini Pizza Rolls (recipe tuesday)

INGREDIENTS
1 (8 ounce) can refrigerated crescent roll dough
2 cups shredded mozzarella cheese or mexican mix cheese
24 slices sliced pepperoni or ham
1 (14 ounce) can pizza sauce

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
On a large baking sheet, pinch the 8 crescent roll dough triangles into 4 large rectangles. Layer each rectangle with 6 pepperonis and even amounts of cheese. Roll tightly lengthwise and slice each into 4 or more pieces. Bake in the preheated oven 12 minutes. or until golden brown. Serve with pizza sauce for dipping.

Christmas Dinner Ideas (TT)

Merry Christmas! Here are some ideas for your Christmas Dinner with a bonus recipe at the end.

  9. Broccoli and Cheese
  10. Rolls

  12. Squash Casserole
  13. Pecan Pie

And for a bonus Monkey Bread (recipe follows):

3 cans Pilsbury Biscuits
1 cup Sugar
1 tablespoon of Cinnamon
1 cup brown sugar
1 stick butter
Nuts if wanted
Preheat oven to 350 degrees


Directions:

Mix sugar and cinnamon in a zip lock bag.

Cut biscuits into quarters. Place a few biscuits at a time into the sugar/cinnamon bag and coat with mixture. Then layer the biscuits into your cake pan (or bundt is recommended) alternating with nut layers until all biscuits are in the pan. Do not put nuts on the top after all the biscuits are used as it will make it uneven when you flip it over.

Melt butter and brown sugar together then pour over top of the biscuits. Then bake for 45 minutes on 350. When you remove from the oven the sugar will be very runny so take care to flip it over into something with sides to prevent a huge mess.
